Hot Chocolate [paleo, aip, dairy-free]

Picture it: snow falling outside, fire burning, you sitting down on a comfortable chair wrapped up in a blanket drinking healthy hot chocolate.

Mmmm... Delicious!

While I don't happen to live in an area that gets a lot of snow, I still very much enjoy sipping on a nice cup of hot chocolate in the winter.  Something about hot drinks are so comforting and relaxing -- that warm sensation you get with each sip (or even simply holding your mug) makes you feel at peace.

I grew up drinking the "hot cocoa" from a packet.  You know -- the one filled with skim milk, corn syrup, hydrogenated oil, lab-made sugar, and preservatives.  But when I realized that the majority of the ingredients in the hot chocolate mix were unhealthy, I stop wanted to drink it.

The problem is that I missed it!  I didn't want to stop drinking it.  I wanted to get my hot chocolate "fix" during the winter months.  Thankfully, I still could!  I found a way to have my hot chocolate and have it be good for me!  (Plus, it only takes a few minutes to make.)

Now I want to share it with you.  This recipe has been a lifesaver for me the past month, and I hope it comes in handy for you too as you jump on this incredible real food journey!

Hot Chocolate [paleo, aip, dairy-free]

Serves: 1

What You'll Need:

  • 10 ounces (1 and 1/4 cup) regular coconut milk from carton (I like SoDelicious and Silk brands the best as they have uncertain flag ingredients)
  • 1 Tbsp + 1/2 tsp cacao powder (or carob for aip-friendly)
  • Sweetener of choice , to taste (this could be coconut sugar, maple syrup, honey, pure stevia extract, or others). I usually use just 1/4 of a tsp of coconut sugar, but you don't need as much with carob as you do with cocoa since it's less bitter -- but start with 1/4 tsp and add from there until you reach your desired sweetness.

Directions:

Heat milk until hot (whatever method you desire).  Add ingredients and mix until smooth.  Drink up!

* Note: You can make this recipe thicker and creamier by using full-fat coconut milk from the can.  I usually use coconut milk from the carton because that's what I tend to have on hand more often, but it's great either way (:
