Are you like me and just LOVE a good bowl of spaghetti? Oh. M. Gee. I could seriously eat it every day (as long as there's a hunk of meat in it)...! But because I don't love consuming processed noodles (occasionally I'll use rice noddles in a jiffy), I almost always make it with a good ole nutritious spaghetti squash - the paleo spaghetti way! No, it may not taste the same (though you seriously get used to it fast...!) or have the same texture as noodles BUT it is so much healthier for ya and you'll soon fall in love with your new guilt-free pasta (: I don't know if I've told you before, but I'm seriously no cook... I don't love cooking, and I like cleaning the used dishes even less. So this is another "prep it and forget it" recipe to make life easier. One of my go-to recipes. What I would really like to do (my hubby would totally not be okay with this...), is to purchase a couple more crock pots so I can do several slow cooker meals each week without all the hassle of storing the leftovers and cleaning the crockpot just to have to wash those all over again in a day or two...just sayin'.

Anyway, here's the dish - super easy, super healthy spaghetti (the paleo way:).
Crock Pot Paleo Spaghetti with Pork Meat Sauce
- 1 medium spaghetti squash
- 1-lb ground pork, raw (hormone and antibiotic-free - bought mine from Trader Joes)
- 1 jar of organic, sugar-free spaghetti sauce (I usually pick up Simply Nature spaghetti sauce from my local Aldi, but this Organic Spaghetti Sauce will work great as well)
- 1 garlic clove, minced
- 1 Tbsp organic minced onion (or 2 tsp onion powder)
- 1 Tbsp Simply Organic Italian Seasoning
- 1 jalapeño pepper, diced (optional or can substitute for 1 tsp dried red pepper flakes here: Simply Organic Crushed Red Pepper)
In a 6-quart crock pot (I have this programmable 6-Quart Crock-Pot, but any will do), add the sauce, seasonings, peppers, and ground pork. Mix together being sure your ground pork is separated into small bite-sized pieces. Slice your spaghetti squash in half crosswise (you may need a rather large knife for this task...). Take a large spoon and remove seeds and filling. Place squash flesh-side down into crock pot on top of your meat sauce.
Cook on low for 6 hours or until the inside of your spaghetti squash is tender and ready to shred. Once it has finished cooking, remove the spaghetti squash and allow to cool for 10 or so minutes (you should be able to touch the outside without getting burned...!) Now you're ready to shred the inside of the squash! Take a fork and shred the inside of the squash until all flesh has separated from the skin and place into a bowl. Stir meat sauce to mix.
And now it's time to eat... Place some of your squash "noodles" onto a plate and top with desired amount of pork meat sauce (top your serving with shredded Parmesan cheese made from grass-fed dairy for a real treat!). Sit down, relax, and eat it up!
