Easy, grab & go breakfast egg casserole filled with healthy fat, protein, and vegetables. This is my go-to recipe for when I know mornings might be a little rushed. Simple, easy, & delicious.
Breakfast Egg Casserole with Sausage and Sweet Potatoes [paleo, gluten-free]
- 1 large or 2 medium sweet potatoes, peeled and cubed
- 12 pastured eggs
- 5 cups broccoli, lightly steamed
- 1 lb ground breakfast sausage, cooked and drained
- 1 tsp Real Salt
- 1/2 tsp ground pepper
- 1/2 tsp garlic powder
Preheat over to 400 degrees F. Steam cubed sweet potatoes on stove-top for 5-8 minutes or until tender. Place eggs, salt, pepper, and garlic powder into a large bowl and beat until fluffy. Fold in your ground sausage.
Spread steamed broccoli evenly over the bottom of a 9X13" glass pan. Top with egg mixture. Lightly stir all ingredients in pan until evenly combined.
Place pan on the center rack of your preheated oven and bake for 20-25 minutes or until eggs are cooked through.
Serve this with a nice cup of aip hot cocoa and enjoy!
